- Cook the pasta in boiling salted water, following the directions on the package, until the pasta is cooked but still firm to the bite. Pour the pasta into a colander, rinse it with cold water, and let drain. Place the pasta in a bowl.
- Place the cherry tomatoes in a large freezer bag. Seal the bag tightly and crush the tomatoes in the bag. Add the tomatoes along with their juices to the pasta.
- Season the pasta with salt, pepper, and Sambal Oelek. Drizzle olive oil over the top, toss, and let sit for about 15 minutes.
- To serve, add the spinach leaves and mozzarella balls to the salad and toss. This cold pasta dish is excellent either as a main dish or as a side dish, such as hamburger patties or roast chicken for example.
Tip: The ingredients can be easily altered. The salad also tastes very good made with Feta cheese or grilled halloumi cheese instead of mozzarella cheese, and made with arugula or mixed herb salad leaves instead of spinach. You can also, if you like, mix in some sliced bell pepper, cucumber, or fried cubes of zucchini and eggplant.
