Summer in the Biergarten

When the weather turns, and the snow has melted the Germans head for the Biergarten. A cool, freshly tapped beer shaded by the trees on the Biergarten table, the gravel crunches underfoot and the “Brotzeit” snack is unpacked. Then the first sip, the same as it has been over the last 200 years: superb!

The 200 year history of the Biergarten really only has one cellar to thank but let’s start at the beginning... In the 16th century, severe fires often occurred in breweries during the boiling process so a law was passed – the Bayerische Brauordnung (Bavarian Brewing Law) of 1539. It was only permitted to brew beer in winter between the holidays of Saint Michael on the 29th September and Saint George on the 23rd April. The mere thought of no longer having any beer available in the summer of all times immediately stirred the Bavarian innovative spirit.
Deep cellars were dug into the earth as close to the breweries as possible. To protect these cellars from the heat of the sun, the brewers spread light gravel on the ground and planted shady chestnut trees. The large leaves and flat roots of the native chestnut trees provided the perfect protection from the sun and the gravel also helped to keep the area cool. To keep the transportation route as short as possible, they began serving beer in these gardens. The Biergarten became a Bavarian institution and congeniality under the chestnut trees was born.

  • Paulaner on the Nockherberg As one of the most beautiful Biergärten in the heart of Munich, the PAULANER GARTEN has long been an institution and a part of Munich’s cultural history. Making a pilgrimage to the “Salvator-Ausschank” (the Salvator tavern) on the Nockherberg is as much an annual event in Munich as the carnival or Oktoberfest. Munich’s so-called “fifth season” lasts for 17 days (starting on Friday and ending on a Sunday night) and usually starts at the beginning or middle of March.   • The Rosengarten The Rosengarten lies at the edge of the forest on a hill in Munich’s Westpark in the middle of the former National Garden Show grounds, surrounded by lakes, small streams and meadows.   • Forsthaus Kasten A wonderful Biergarten, an distinct oasis in the middle of the forest. Great emphasis is placed on the use of regional produce.   • Gut Keferloh This is where the Keferloher Steinkrug (beer mug) was invented around 200 years ago. The clay mug gained its enormous popularity as a result of the fact that it keeps the tapped beer fresh and cool for a long time. The carbon dioxide in the beer clings to the rough surface of the mug in the form of small bubbles. The Paulaner therefore keeps its taste for longer. From now on, beer enthusiasts will be able to enjoy freshly brewed Paulaner beer and typical Bavarian lifestyle in the centre of the American metropolis. Heart of the Bräuhaus, which covers more than 4,000 square metres, is its very own micro brewery. The building itself is located in Lower Manhattan and was once home to the famous Sammy's Follies Cabaret, known as the "Stork Club of the Bowery" in the 1940's and 50's. Everything you’ve ever wanted to know about Biergärten ...

Armed with this Biergarten guide, nothing should go wrong on your first visit to a Bavarian Biergarten.

    Dress code

    Any outfit goes in a Biergarten. Of course, real Bavarians happily wear their “Lederne”, the traditional Bavarian lederhosen. And the women often wear their dirndl dress in the Biergarten.

    Beer benches

    You won’t ever find a table for two in a Biergarten as everyone is very outgoing. You can sit yourself down anywhere and toast one another with a beer.

    The origin of the pretzel

    According to legend, the court baker Frieder baked such awful bread, that they threatened to hang him. He managed to save his neck by inventing a bread “through which the sun shone three times”. The man survived, and with him the pretzel.

    Beer – “liquid food”

    In the 14th century, the Bavarian monks brewed according to the motto: “Liquida non frangunt ienum” (liquid doesn’t break the fast). Due to the hard work and often meagre meals, particularly during Lent, beer was considered to be liquid food and a daily allowance of up to five litres was granted!

    Food

    Traditional food includes Steckerlfisch, usually a mackerel on a wooden skewer, grilled over charcoal. There’s also Obazda, Radi, Wurstsalat, etc. According to an old tradition, you may bring your own Brotzeit (snack but no drink) to a Bavarian Biergarten.

    The toast

    Rumour has it that the clinking of beer mugs, which has become an established part of table manners, was originally a sign of confidence. In the Middle Ages it was very common to dispatch one’s enemy with poison. You therefore clinked glasses so heavily that the beer spilled over into the other person’s mug. Anyone who didn’t clink in fear that the poison would slosh over into their own glass was suspect.

    King Ludwig’s decree

    It is tradition to bring your own Brotzeit (snack) with you. This has been customary since the Biergärten were established in Munich in the 19th century. At that time it was only possible to cool freshly brewed beer in the beer cellars in the hillsides along the Isar. King Ludwig I of Bavaria allowed the direct sale of beer in and outside the cellars, but not the serving of food.

    What’s the proper way to eat Weisswürste?

    Weisswürste shouldn’t hear the bells chime, say the locals. This means that they should be eaten up before midday. This saying has a long history and comes from a time when there weren’t any fridges. The Weisswürste spoiled very quickly in the heat and therefore had to be eaten up by noon. Not only that, you should eat Weisswürste, skin and all, with your fingers and not with a knife and fork. But please only ever eat it with sweet mustard! Never, ever eat it with medium-hot mustard or, heaven forbid, ketchup! It is traditional to drink a Hefe-Weissbier with your Weisswürste.

    The Biergarten. A classless preserve

    All levels of society rub shoulders in a Biergarten. Whether rich or poor, in a Biergarten everyone is the same. For this very reason alone, no-one would ever dream of looking suspiciously at the grumpy old buffer with the whiskers who’s been fondling his mug of beer at the next table. Saving seats or keeping your table to yourself when there are still places free is considered “sacrilegious” and a quick way to become a social outcast.

    Self service and the beer mug

    The person who sits himself down in a Biergarten and waits for the waiter or waitress to take their order will be waiting in vain. This is because self service rules in a Biergarten – except for set tables. In most Biergärten drinks usually only come in the large “1 litre” format. So don’t overdo it and try to get all your friends a beer at the same time. Only a professional waiter or waitress is able to manage more than three beer glasses at once.
